It's National Bubbly Day! Instead of just popping a bottle of champagne we decided to try this fun recipe for Lemosas. This drink was a yummy twist on the classic mimosa. A mimosa can be a bit tangy, but this Lemosa was sweet and fruity! I will definitely make this again in the future. It's a great way to jazz up your typical Sunday brunch. Ingredients:
For the Simple Syrup
1 c. Sugar
1 c. Water
2 c. blueberries
Zest of 1 Lemon
For the Mimosas:
2 c. Lemonade
1 bottle of Champagne or Prosecco
Fresh Blueberries
Directions:
In a saucepan heat the sugar and water and stir until the sugar is dissolved. Then add the blueberries and lemon zest. Bring the mixture to a boil, then lower the heat and simmer until the blueberries burst which will take about 5 minutes.
Let the mixture cool for 10 minutes.
Add a tablespoon of the blueberry syrup to the champagne flutes. Pour in 1/4 cup of lemonade. Lastly, top it off with the champagne.
I also added fresh blueberries and a lemon wedge for garnish. Cheers!
