Did someone say Prosecco? Yes. #NationalProseccoDay

Prosecco – the sparkling Italian wine we know and love in our brunch-time Bellini’s and as an every-day choice for a bubbly pick-me-up. What better way to embrace the summertime and National Prosecco Day than with a fresh, light and crisp Melon Prosecco Cocktail, courtesy of This Silly Girl’s Kitchen. This recipe is simple, refreshing and a perfect pick-me-up on these hot summer days and cool summer nights.

This yummy recipe includes:

1 Bottle of Prosecco (This Silly Girl’s Kitchen prefers VOVETI, a dry Prosecco with flavors of pear, green apple, melon, and peach)

1 Cup of the Melon Simple Syrup

The Melon Simple Syrup (which I plan on using in other cocktails) is quick to make and only involves three ingredients! The ingredients include:

1 Cup Water

1 ½ Cup Granulated Sugar

1 ½ Cup Medium Diced Watermelon, Honeydew, or Cantaloupe (whichever you prefer!)

Put the water and sugar in a saucepan. Dissolve the sugar in water over medium heat and stir occasionally. Simmer for about 20 minutes. Remove from heat and let the mixture cool. Once cool, strain the syrup through a mesh strainer.

Using champagne flukes or sippy cups (lol), pour 1 Tablespoon (or more, depending on your sweet tooth) of the Melon Simple Syrup in the bottom on the glass. Top it off with prosecco, stir and garnish with melon balls of your choice! Not only is this cocktail pretty, but it fully embodies #SummerTimeVibes.

Moms deserve a cocktail every now and then. Enjoy!
